What is a Creamed Honey?

We often get customers asking exactly what is creamed honey so read on if you'd like to know more!

Creaming honey is quite a special process and quite a tricky one in order that the honey does not split. We are delighted that cold creaming honey is something that our organic beekeepers Luisa and her son Mario specialise in. They cold-cream some of their honeys to achieve a smooth, fine-crystal texture.

Its a process that not many beekeepers do so on a recent visit Mario was keen to show us how this is done.

Honey is a barrel being creamed

The honey is mixed in what looks a bit like an ice cream mixer which whips the honey until it has a wonderfully smooth consistency. To achieve this, they ‘seed’ the honey from a previous batch where the crystals are just the right size. Then, as the honey is churned, the crystals replicate, creating very fine crystals resulting in a honey that is a cross between runny and set. These creamed honeys have a wonderful texture, are still pourable, but are ideal for spreading. Like all our honeys, no heat is used in this process, so the honey remains 100% raw.
