What Does Raw Lavender Honey Taste Like? This is a very light and pleasant herb flower honey, it has a warm and soothing taste of creamy florals. It comes from bees feeding on the lavender bushes in the Mediterranean area, different from the tree sap honey which is often dark in appearance and strong in taste, this honey tends to be mild, lighter and softer in taste.

Honey Facts Lavender honey is a favourite of many due to its beautiful warm flavour, it is said to assist in a good nights sleep if taken before bedtime.

Plant / Tree The lavender plant is a herbaceous perennial shrub also known as espliego in Spanish. It tends to be short lived and has a wide amount of varieties in its genus. It is widely used as an essential oil in aromatherapy and is known to help relax and assist in better sleep and stress management.

Colour: A lovely deep amber colour turning to a light buttery yellow colour when crystallised.

Common Uses Lavender honey is particularly good to use as a skin care treatment to heal burns, cuts, abrasions and infections. It is also very versatile and can be used in recipes such as glazes for meats, salad dressings, cakes, flapjacks, breads, pastas and teas.

Who produces the honey?  The bees of Antonio Simon, a 4thgeneration beekeeper who takes pride in producing honey in a traditional way without adding or taking away anything.  This variety of Lavender honey comes from the organic Lavender fields in Brihuega, Guadalajara.

Why Raw Honey is different to Processed Honey - Raw honey generally means the honey has not been processed, it has come from the hive to the jar with minimal interference. Most supermarket honey is highly processed to make it look more attractive. It will often have had almost all its pollen filtered out, been pasteurised at high heats and then blended with honeys from many different places. Raw honey tends to vary from batch to batch, this is because it is not processed in a factory, filtered or heated to look homogeneous, it changes with the season and climate and what the bees feed on, we will update this fact sheet according to which batch we currently have in.

Crystallisation:-  Please know that raw honey does crystallise and is a natural process of raw honey (therefore we cannot except returns on honey that may have crystallised). We indicate on the website the state of each honey - either runny or crystallised but be aware this is to the best of our knowledge and the state can change quickly.   If you want your honey runny and it has crystallised it's very easy to return it to runny go to this link Runny Honey  or see this section under our FAQ's Why Is My Honey Crystallised?

We only supply raw honey because we believe this is how all honey should be.  If you don't want your honey to crystallise then raw honey probably isn't for you.
