This is a particularly potent Sidr honey. We got it lab tested to see how antibacterial it was and it came out at 19 Active, like a Manuka UMF 19.

What does "Active" mean in the product title?  We send some of our honeys to a lab for a "Total Activity test". This test measures the total antimicrobial activity of a honey. This is done by testing a solution of a honey on a lab plate against the Staph Aureus bacteria. the honey is graded according to the amount of bacteria that the honey solution kills. Generally, the range that we see will be between 10 and 25 plus. This type of test is similar to the test used to grade Manuka Honey.  The main antibacterial activity is caused by a bee enzyme that creates hydrogen peroxide in the honey. Please bear in mind that the Activity Level is at its highest when we test it and will decrease over time. This will happen faster if the honey is exposed to light and heat. Storing the honey in a dark cool place will help to slow down the rate at which the Activity Level decreases.

Raw Sidr Honey: The bees feed on the lavish nectar that this tree produces for a short period in the late Spring from which they create this legendary honey. It tends to stay runny for longer than most blossom honeys.

The taste: You will find that it is a thick honey with a rich, herbal sweet taste, with slight vanilla notes. There is a sour and tangy aftertaste that lingers.

More on this honey: Sidr Honey is among the finest variants of honey in the world. It comes with a distinctive taste, and is known for its antibacterial qualities. This honey is considered sacred in many religions.

Where does it come from?: This Sidr comes from a forest of Sidr trees in a wild location in central Greece, away from pesticides and herbicides.

About the beekeeper: This honey comes to us in partnership with fellow beekeeper Dimitris, who is an artisan who seems to be able to encourage his bees to produce particularly potent Sidr. Our lab test showed that it is a very pure Sidr honey (see the analysis certificate for details). This batch is bursting with the freshness of spring.
