Raw Organic Wild Lavender Honey: is a light and pleasing herb flower honey, it has floral notes and a creaminess like vanilla - but doesn't have quite as strong a flavour as honey from cultivated lavender. This honey comes from bees feeding on the wild lavender bushes in the Sierra del Pradena

Colour: This particular honey is a light shade of orange, going a creamy light brown colour when set.

Where does the honey come from: The wild lavender plant is a herbaceous perennial shrub known as Cantueso in Spanish.  Sierra del Rincon UNESCO Biosphere Reserve. The oil from lavender is widely used as an essential oil in aromatherapy, because it is said to aid relaxation and sleep.

More Wild Lavender honey facts: Wild lavender honey is good for protecting and soothing abrasions and burns (although obviously see your doctor if it is a bad abrasion or burn). It is also especially good poured over cheese! And because it is so mild children love it on its own and appreciate the subtle taste.

Raw Organic Eucalyptus Honey is a really beautiful tasting honey; it has a wonderfully fruity creaminess along with a very mild eucalyptus/menthol aftertaste. Suitable for all ages as it is not overbearing in any way. This is a relatively light-tasting tree honey. It shares characteristics with other herbal honeys, such as thyme or sage.

Colour: This particular honey is a deep shade of orange amber when runny and when set it turns to a creamy tan.

Where does the honey come from: This honey comes from some hives Antonio has in De Coimbra, Portugal. The  Eucalyptus tree is an evergreen, also known as Eucalipto in Spanish. It is one of the fastest growing trees in the world.  Eucalyptus originates in Australia but has been introduced to Europe.

More Eucalyptus honey facts: Eucalyptus honey is a variety with a unique composition.  It contains traces of eucalyptol which gives it its fresh revitalizing taste. This essential oil is often used in aromatherapy as a decongestant and antiseptic.

Raw Organic Oak honey/Active 20: is a very deep and rich tasting tree honey; it has a fruitiness as well as a deep woody flavour. Tree honey tends to be dark, have a stronger flavour and are less likely to set due to a relatively low glucose content. This Oak is London Honey Awards and a Great Taste Award Winner!

Colour: This particular oak honey is very dark in colour, almost black. In some cultures, dark honey is very highly valued.

Where does the honey come from? This variety of oak honey comes from trees growing at the Sierra del Rincon UNESCO Biosphere Reserve, where no chemical treatments are allowed. The trees grow at around 1100 metres in an extremely wild and untouched place.

More Oak Honey Facts:  Most Oak honey comes from the acorns of the oak tree. The bees collect a sweet fluid that the acorns weep in July and August and from this the bees create a unique type of honey. Other types of tree honey are produced solely from the residue left by the activity of aphids on trees - but this is not the case with the oak honey. The bees directly collect the sweet fluid mainly from the acorns. It tends to be less sweet than other honeys and can be very potent.

Antonio's Raw Organic Multifloral Honey generally has a light and creamy flavour with a slight menthol taste and a good amount of floral wild flowers, though it can also have a much darker and bolder flavour depending on the batch. This variety makes for a great entry point to the world of raw honeys.

Colour: Depending on the season, this particular honey can go from a rich, dark toffee colour, which turns a deeper shade of orange when set, to a lighter, amber colour going a a lovely shade of orange in the light.

Where does the honey come from?  This Multifloral honey comes from a remote village called Patones, located in Jarama Valley in the northeast of Madrid, Spain. It is a certified organic zone.

More facts on Multifloral honey: Multifloral honey varies widely depending on the areas the bees have been feeding on, it can be wild meadows or forest flowers or just a mix of any flora in the local area. This honey is particularly good to use as a skin treatment to aid in clearing blemishes, spots and acne
