Artisan Certified Organic Greek Vanilla Fir Raw Honey – Rare, Creamy & Protected Designated Origin

A true rarity in the world of raw honey, Greek Vanilla Fir comes exclusively from the high-altitude Black Fir forests of Mount Mainalo in the Peloponnese. This Protected Designation of Origin (PDO) honey is only produced in good years and is highly sought after for its low glucose content, thick texture, and creamy caramel-vanilla flavour.


Summary

Vanilla Fir is a very thick, creamy honeydew honey with earthy notes and hints of vanilla and caramel. It is one of the few honeys in the world that rarely crystallises thanks to its very low glucose levels. This year’s batch is just over 14% in moisture—an exceptionally low value, making the honey even more intense and luxurious.

Brought to us through Thomas and his cousin Giotis, this PDO-certified honey is produced exclusively from the rare Black Fir trees of Mount Mainalo in Arcadia, Greece. It’s a limited treasure, harvested only in the rare years when conditions are ideal.

Origin

This honey is gathered only in the fir forests of Mount Mainalo, in Arcadia, Peloponnese, Greece. These forests are the only habitat of the rare Black Fir tree, making Vanilla Fir honey exclusive to this region and one of the only honeys with EU Protected Designation of Origin (PDO) status.

👤 Producer Story

Thomas, a passionate beekeeper in central Greece, works with his father Giorgios and sister Elena. They combine traditional methods with modern practices to ensure bee health and quality honey. The family produces Greek honeys like mountain oak, red fir, vanilla fir, wild thyme, pine, and orange.


🫒 How to store your honey

To preserve its natural potency, store the honey in a cool, dark place. Light and heat degrade the enzymes that contribute to antibacterial activity. Keeping it away from light and high temperatures helps maintain its flavour, texture, and active properties.


🍯 Why Raw Honey is Different from Processed Honey

Raw honey comes from the hive to the jar with minimal interference. Most supermarket honey is processed to look attractive—drained of pollen, heated, and blended. Raw honey varies from batch to batch because it’s not factory-processed or heated. It changes with season, climate, and bee forage. We update this fact sheet based on the current batch.

Raw honey crystallises naturally (so we cannot accept returns on crystallised honey). We indicate on the site whether the honey is runny or crystallised, but this may change.
