Luisa’s Raw Wild Eucalyptus Honey from Asturias - with a hint of Apple Blossom
Back Story
Recently (late April 2026) we travelled to Asturias to witness Luisa’s eucalyptus season for the first time, standing beneath the tall trees as her bees gathered nectar from the blossom. Inside the flowers were tiny pools of nectar, while a fine golden mist fell through the canopy as the bees worked overhead.
The honey from that harvest has now arrived. Unlike the cold-creamed version we have previously offered, this batch has been left in its naturally clear, gently runny state, allowing its distinctive aroma and layered flavour to shine through.

Aroma
Medium to pronounced and notably persistent. The first impression is of damp woodland and aromatic herbs, followed by hints of liquorice and warm caramel. The overall character is earthy, gently savoury and distinctly eucalyptus-led rather than overtly floral.
Flavour
Medium-sweet, earthy and strongly herbal, with much of the complexity suggested by its aroma. Notes of liquorice and caramel are joined by a gentle savoury quality, a touch of smoke and a cooling suggestion of menthol.
The flavour is moderately persistent without becoming overpowering. A faint trace of apple blossom from the orchards surrounding the hives softens the finish and distinguishes Luisa’s eucalyptus honey from more austere examples of the variety.
Colour & Texture
Pale to medium amber in this harvest, naturally clear and gently runny.
Eucalyptus honey can vary from amber to dark amber depending on the season, location and accompanying forage. This batch has not been cold-creamed, so it retains the natural fluid texture of freshly extracted honey.
It is likely to crystallise relatively quickly, gradually forming a more compact texture with fine to medium crystals. This is entirely natural and does not affect its quality.
Origin
Harvested from eucalyptus trees growing in the damp, green coastal landscape of Asturias in northern Spain.
The eucalyptus flowering season is brief, beginning mid to late April. The flowers produce plentiful nectar, which the bees collect alongside small amounts of apple blossom from the orchards surrounding the apiaries.
Asturias is one of Spain’s wettest regions, creating ideal conditions for its tall eucalyptus groves. The hives are raised above the ground to protect them from excess moisture, while the surrounding apple trees contribute a delicate additional note to the finished honey.
Every stage of production, from extraction and coarse filtering to jarring and labelling, takes place at the family’s premises in Felechosa. There are no middlemen or outsourced stages, allowing Luisa and her family to oversee the honey from hive to jar.
Producer Story
In Asturias, northern Spain, Luisa and her family run their raw honey business. Her children Olaya and Mario manage the bees, while her mother Jacoba (88!) and sister Ines assist with extraction and packing.
Their bees forage in forests and on mountains, yielding distinctive certified organic honeys.
They hold a Denominación de Origen certificate from the EU indicating the unique nature of the honeys from their region.
The family is deeply committed to organic beekeeping and controls every stage of production under one roof. Honey is extracted from the frames and coarse-filtered to remove hive debris while retaining naturally occurring pollen and other hive particles before being jarred and labelled by hand.
Luisa’s mother, Jacoba, remains closely involved in the business, carefully labelling jars at the age of 88. Their work reflects three generations, one close-knit family and a shared respect for Asturias and its natural environment.

How to store your honey
To preserve its natural potency, store the honey in a cool, dark place. Light and heat degrade the enzymes that contribute to antibacterial activity. Keeping it away from light and high temperatures helps maintain its flavour, texture and active properties.
Why Raw Honey is Different from Processed Honey
Raw honey is different from processed honey because it’s never pasteurised, finely filtered or blended—so it retains the natural pollen, enzymes and full spectrum of flavour that processed honey loses.
Processed honey is typically heat-treated, blended and homogenised from many different sources to appear uniform. In contrast, raw honey is single-origin, coming straight from the hive with minimal handling.
Its texture, taste and colour vary with the season and the terroir—shaped by the local climate, soil, the temperament of the bees, the beekeeper’s care and the flowers the bees forage on. Each batch is unique, and we update this description to reflect the current harvest.
Crystallisation
Raw honey crystallises naturally, so we cannot accept returns on crystallised honey. We indicate on the site whether the honey is runny or crystallised, but this may change.
Eucalyptus honey tends to crystallise relatively quickly. This batch is currently gently runny but may develop a more compact texture with fine to medium crystals over time.
If you prefer runny honey and it has crystallised, it is easy to return it to a runnier consistency by standing the closed jar in gently warm water.
