Aroma

Woody and warm with strong caramel and nutty chestnut notes. Hints of prune and toasted grain linger on the finish.


Flavour

Rich and dark with a pronounced nutty taste, similar to malty maple syrup. Slight bitterness adds depth, with caramel undertones and a long-lasting finish.


Colour

A mid to dark brown honey with reddish glints when runny. It lightens to a warm caramel colour as it begins to crystallise.


Origin

Harvested in the pristine chestnut forests of Castelo Rodrigo in Portugal. Bees collect nectar from the blossoms and sap of sweet chestnut trees—“Castano” in Spanish—renowned for both their edible nuts and medicinal flowers.

👤 Producer Story

Antonio is a pioneer of organic beekeeping in Spain. His hives are mainly in the Sierra de Guadarrama north of Madrid, with some in Portugal. Working with his son Dani and son-in-law Ruben, he produces certified organic raw honeys and teaches beekeeping. He is sought worldwide for his ethical, organic practices.

To preserve its natural potency, store the honey in a cool, dark place. Light and heat degrade the enzymes that contribute to antibacterial activity. Keeping it away from light and high temperatures helps maintain its flavour, texture, and active properties.


🍯 Why Raw Honey is Different from Processed Honey

Raw honey comes from the hive to the jar with minimal interference. Most supermarket honey is processed to look attractive—drained of pollen, heated, and blended. Raw honey varies from batch to batch because it’s not factory-processed or heated. It changes with season, climate, and bee forage. We update this fact sheet based on the current batch.

Raw honey crystallises naturally (so we cannot accept returns on crystallised honey). We indicate on the site whether the honey is runny or crystallised, but this may change.
