Luisa’s Raw Organic Ling Heather (Calluna) Honey

I visited the beautiful mountain area this honey comes from in summer 2022. The hives sit on a plateau surrounded by peaks at around 1500 metres. It is an incredibly wild and remote place. Raw, natural and one of the purest kinds of honey because of the remote mountain area it comes from. Antibacterial, coarse-filtered, unpasteurised, and enzyme-rich. This raw honey comes from 1500 metres at San Isidro in Asturias, a green and very unspoilt area in northern Spain.

Summary

Luisa’s Mountain Calluna (Ling Heather) Honey is 100% raw, certified organic honey sourced from the wild Calluna shrubs growing at high altitude (around 1500m) in the remote San Isidro plateau, Asturias. With a rich brown colour, it offers a potent aroma of caramel, slightly burnt brown sugar, beeswax, and dry woodiness. The flavour is complex—evoking fruit jam and ripe grapes, balanced by woody earthiness, acidity, and a mild bitter aftertaste. Thick and granular in texture, this is an exceptional shrub honey prized for its depth and intensity.

Producer Story

Luisa and her family run a raw honey business in Asturias, northern Spain. Her children Olaya and Mario manage the bees, while her mother Jacoba and sister Ines assist with extraction and packing. Their bees forage in forests and on mountains, yielding dark organic honeys. They hold a Denominación de Origen certificate from the EU.

Common Uses

  • Culinary: Ideal for adding depth to desserts and spreads.
  • Wellness: Traditionally used for wound treatment and skin infections due to strong antibacterial qualities; now used in some hospitals as wound dressings.

🧊 How to store your honey

Store in a cool, dark place to maintain enzyme activity and texture. Avoid heat and direct sunlight.

🍯 Why Raw Honey is Different from Processed Honey

Raw honey is unheated and minimally processed, retaining natural enzymes, antioxidants, and pollen—capturing the unique character of its ecosystem and season.

🌀 Crystallisation

Natural crystallisation occurs and is not a defect. Jars are labelled “runny” or “crystallised,” but states may vary. For decrystallisation tips, see our Runny Honey Guide or FAQs.
