Raw Active Honey Set – Greek Sidr & Spanish Forest Honey with Free Dipper

A distinctive pairing of two high-activity raw honeys from Greece and Spain: Raw Greek Sidr Honey from Mount Belles (Active 20) and Raw Certified Organic Forest Honey (Active 20.5)

This set brings together two very different expressions of high-activity raw honey from opposite sides of the Mediterranean. From the mountain Sidr of northern Greece to the dark Forest Honey of northern Spain, the two jars offer contrasting flavours, origins and traditions while sharing exceptionally high independently tested activity.

The Greek Sidr comes from Mount Belles, a Natura 2000 protected area recognised for its exceptional biodiversity and unspoilt mountain environment.

The Spanish Forest Honey comes from Asturias and is produced under the Protected Geographical Indication (IGP) “Miel de Asturias”, recognising unique honeys whose character is closely linked to the flora, landscape and traditional production of the region.

1, Raw Greek Sidr Honey from Mount Belles - Tested Active 20

This distinctive mountain Greek Sidr honey is produced by the bees of Dimitris and his father Kostas on the pristine slopes of Mount Belles in northern Greece.

This mountain Sidr is harvested in an untouched environment that is a Natura 2000 reserve recognised for its high biodiversity. Its rich, layered flavour combines herbal sweetness with notes of vanilla, caramel and earthy undertones. Sustainably produced and cold-pressed to preserve its natural enzymes and antibacterial properties, this 100% raw and unpasteurised honey is perfect for soothing sore throats and elevating your culinary creations.

Product Highlights

  • A Greek mountain Sidr Unlike much Sidr honey, this is produced at altitude on Mount Belles, giving it a distinctly mountain-grown character.
  • High bioactivity. Diastase (an enzyme that indicates freshness of the honey) is off the scale.
  • Lab-tested Activity Rating of 20 – similar antibacterial potency to a Manuka UMF 20 honey, which normally sell for at least £150 a kilo.
  • Unusually high in minerals for a flower honey, a trait normally only seen in dark tree honeys.
  • Sophisticated Flavour Profile – A luxurious, rich sweetness with subtle hints of vanilla, caramel, and earthy undertones.
  • Rare and Legendary Honey – Collected from the dense Sidr forests of Mount Belles in Northern Greece, a pristine area that is a Natura 2000 reserve.
  • 100% Raw and Unpasteurised – Free from heat treatment and chemical processing, preserving its natural enzymes.
  • Sustainably Produced – Crafted by Dimitris and Kostas, organic beekeepers committed to environmental preservation and ethical practices.
  • Cold-Pressed for Purity – Ensures the honey’s delicate properties and natural enzymes are fully retained.
  • Versatile Uses – Ideal for soothing sore throats and coughs, sweetening teas, drizzling over yogurt, pairing with cheeses, or creating marinades.

Flavour

This Greek Sidr honey has a luxurious, smooth texture with a deep amber hue. Its flavour is indulgent and complex, combining a herbal sweetness with subtle hints of vanilla, caramel and earthy undertones. The herbal sweetness develops into vanilla, caramel and earthy notes, followed by a long, gently warming finish.

Colour

The honey showcases a deep amber hue, indicative of its purity and origin. Crystallisation may occur over time, lightening the colour while preserving the exceptional quality of the honey.

Origin

Harvested in the remote wilderness of Mount Belles, Northern Greece, this honey is produced in a pristine mountain environment with no contamination from pesticides. The dense Sidr tree forests and unique combination of altitude and natural springs contribute to the exceptional quality and potency of this honey.

Producer Story

Dimitris and his father Kostas are passionate organic beekeepers, caring for their hives in the pristine Mount Belles area. Their commitment to sustainable practices ensures the highest quality honey, reflecting the purity and natural richness of the region. Dimitris describes the honey from this area as “more than organic” due to the untouched biodiversity and the dedication to keeping the process entirely natural.

Common Uses

This honey is perfect for both health and culinary purposes. Its high antibacterial properties make it ideal for soothing sore throats and relieving coughs – simply stir a teaspoon into warm water or herbal tea for a comforting remedy.

In the kitchen, its rich, layered flavour can be appreciated in various ways. Drizzle it over warm pancakes or waffles for a decadent breakfast, pair it with sharp or creamy artisan cheeses, or use it as a natural sweetener in salad dressings. It also works wonderfully in marinades or glazes for roasted meats and vegetables, adding depth and a hint of sweetness. For a luxurious treat, swirl it into yogurt or drizzle it over ice cream and fresh fruit.

2, Raw Certified Organic Forest Honey/Active 20.5

The Spanish half of this Mediterranean pairing comes from the wild forests of Asturias and neighbouring León, where Luisa and her family produce this exceptionally dark, thick forest honey.

A dark, intensely flavoured raw forest honey from the remote mountains of Asturias and neighbouring León in northern Spain. Antibacterial, coarse-filtered, unpasteurised and enzyme-rich, this is a very high quality Forest honey with an exceptionally thick texture.

Summary

Raw Certified Organic Forest Honey is 100% raw and certified organic, sourced from wild Mediterranean oak, chestnut and forest flowers in the remote Mountains of Asturias, Spain. Dark, thick and full-bodied, it has a molasses-like richness with woody, earthy and slightly savoury notes. Its naturally high fructose content also means it tends to remain liquid for longer than many blossom honeys.

This honey is produced under the Protected Geographical Indication (IGP) “Miel de Asturias”, recognising honeys whose character is closely linked to the flora, landscape and traditional production of the region.

Product Highlights

  • Antibacterial - Active Rating 20.5
  • Coarse-filtered
  • 100% Raw
  • Certified organic & unpasteurised
  • High in natural fructose
  • Thick, dark, and slow to crystallise
  • Harvested from oak, chestnut, beech & pine forests in Asturias, Spain

Aroma

A deep, woody aroma with sweet sap, forest-floor and earthy notes, reflecting its oak, chestnut and woodland origins.

Flavour

Full-bodied and slightly savoury, with dark molasses, woody and earthy notes. It is less overtly sweet than most blossom honeys, with a deep, lingering forest character.

Colour

Very dark amber to nearly black in its liquid state. Glossy and thick, retaining intense colour as it crystallises naturally.

Origin

Sourced from the wild forests of Asturias and the neighbouring province of Leon, northern Spain—an untouched, chemical-free environment where bees gather nectar and sap from native oak, chestnut, beech, and pine trees.

Producer Story

Luisa, her daughter Olaya and son Mario are passionate artisan beekeepers from the wild Asturian regions of northern Spain. Their organic practices ensure that the honey they produce is pure, raw, and full of flavour, reflecting the rich biodiversity of the region. This is a family operation and includes Luisa's mother Jacoba and her sister Ines, who pack the honey.

Luisa and her family also produce honey under the Protected Geographical Indication (IGP) “Miel de Asturias”, recognising the distinctive character of honeys produced from the flora and landscapes of Asturias.

Common Uses

Asturias is renowned for its artisan food traditions, especially apples, cider and cheese, making this dark Forest Honey a natural fit for many of the region’s classic flavours.

  • With apples: Drizzle over baked or roasted apples, or add to an apple crumble where its dark, molasses-like flavour balances the fruit’s acidity.
  • Cider glazes: Combine with Asturian-style cider or cider vinegar for glazes and sauces for pork, chicken or roasted vegetables.
  • Cheese: Excellent with mature, blue or smoked cheeses, where its dark sweetness contrasts with salty, savoury flavours.
  • Breakfast: Spoon over porridge, natural yoghurt or toasted sourdough with sliced apple and walnuts.
  • Baking: Adds depth to apple cakes, gingerbread, fruit cakes and spiced biscuits.
  • Dressings: Whisk with cider vinegar, mustard and olive oil for a rich sweet-and-sour dressing.
  • Roasted foods: Use in marinades or glazes for pork, root vegetables and squash.

What does “Active” mean?

We send this honey to a lab for a "Total Activity" test, which measures antimicrobial potency against Staph aureus bacteria. An Active 20.5 rating is exceptionally high—comparable to high-grade Manuka honey. The activity is largely due to an enzyme that produces hydrogen peroxide. Please note: the activity level is highest at testing and naturally declines over time, especially with light and heat exposure. Store in a cool, dark place to help maintain potency.

How to store your honey

Store in a cool, dark place to preserve enzymes and texture. Avoid heat and direct sunlight to maintain quality.

Why Raw Honey is Different from Processed Honey

Raw honey is unheated, unpasteurised, and minimally filtered—preserving pollen, enzymes, antioxidants, and unique flavour profiles reflecting its origin.

Crystallisation

Crystallisation is natural in raw honey and not a defect. Jars are labelled “runny” or “crystallised,” but this may change over time. For tips on decrystallising honey, see our Runny Honey Guide or FAQs.

1
What is the story behind Luisa and her family’s beekeeping operation?
Luisa has been a beekeeper for over 40 years. Going further back in time her parents and grandparents were also beekeepers. She runs a close knit family operation consisting of her daughter Olaya and son Mario, who are the beekeepers. Then her sister Ines and mother Jacoba (who is 88 and still working) help with packing the honey. Their company is based on the very distinctive honeys of Asturias and Leon, which tend to be dark and strong tasting.
2
What is the status of Luisa’s honey?
Asturias is a part of Spain where many people left the villages to go to the city in the 20th century. Therefore, it is a very wild and underpopulated region of Spain, on the north western coast of Spain. It is an ideal place for the organic honey production, which Luisa practices. Her honey is 100% raw – it is never heated or filtered beyond coarse filtering to remove any debris that remains from the hive. Therefore her honey has all the natural enzymes, pollen, and beneficial properties that make raw honey such a wonderful natural product. Being certified organic guarantees that Luisa’s beekeeping follows specific principles, such as no sugar feeding, the hives being made of natural materials, the hives being a specified distance from any non organic crops etc. There is monitoring by the organic certifier, which means inspectors can turn up without warning. Where you see where Luisa’s bees forage, on the mountain tops and in the forests that carpet the sides of the mountains you realise that this honey is super organic.
3
What types of honey does Luisa produce?
Her flagship honey is an organic Forest, which is dark and rich. On the mountain sides and tops there are both main types of heather honey. There is the heather from the genus Erica and there is the Ling heather, known as Calluna in Spain. This is a thixotropic honey, which has a jelly like consistency and is in high demand in western Europe and Japan. Then there is Chestnut honey and Eucalyptus honey. Luisa also has a range of creamed honeys, she creams Chestnut, Heather and Eucalyptus. This process gives the honey a smooth consistency, which is neither set or runny (and is still totally raw).
4
Where do Luisa’s honeys come from?
Luisa’s honeys mainly come from the region of Asturias, with some of her honey coming from the neighbouring region of Leon. These are wild mountainous forested regions. The heather varieties tend to come from the mountain tops, whilst the forest honeys come from the forests that carpet the mountain sides. In addition, the eucalyptus comes from the lower areas near to the coast of Asturias, where the air is moist and the climate milder, which perfectly suits the production of Eucalyptus honey.
5
Is there anything else I should know about Luisa’s honey?
Yes! Her honey has a Denominación de Origen (DO) certificate from the EU, which recognises its authenticity and quality as a unique product that has specific characteristics related to the soil and climate of Asturias. In addition, Luisa’s honey has won many awards. She exports some honey to Japan and there it was voted as Honey of the Year in the main honey competition there.
6
Any recommendations for ways to use Luisa’s honey?
As well as an aid when you have a cough or cold Luisa’s honey pairs very well with a Spanish cheese, such as Manchego. Pour a spoonful of her forest over a slice of Manchego cheese and see how the flavours set each other off!
7
Why are many of Luisa’s honey varieties darker than other raw honeys?
The bees forage on chestnut, oak and heather. These are honeys that are particularly high in minerals and antioxidants, especially Chestnut. The tannins (a kind of antioxidant) make the honey very dark and also give it a bit of a kick – you get a tickly feeling in the back of the throat when you swallow it.
