Flavour

This organic Sidr honey has a luxurious, smooth texture with a deep amber hue. Its flavour is indulgent and complex, combining a herbal sweetness with subtle hints of vanilla, caramel, and earthy undertones. The sophisticated taste lingers on the palate, offering a uniquely rich experience.

Colour

The honey showcases a deep amber hue, indicative of its purity and origin. Crystallisation may occur over time, lightening the colour while preserving the exceptional quality of the honey.

Origin

Harvested in the remote wilderness of North Eastern Greece, this honey is produced in a pristine environment with no contamination from pesticides. The dense Sidr tree forests and unique combination of altitude and natural springs contribute to the exceptional quality and potency of this honey.

Producer Story

Crafted by Giannis, a dedicated young organic beekeeper. His mother used to have beehives and he started beekeeping many years ago as a hobby. The hobby turned to a passion and he became a certified organic beekeeper in 2012. He lives in North Eastern Greece where he places his hives to produce this wonderful Sidr honey.

Common Uses

This honey is perfect for both health and culinary purposes. Its high antibacterial properties make it ideal for soothing sore throats and relieving coughs – simply stir a teaspoon into warm water or herbal tea for a comforting remedy.

In the kitchen, its rich, layered flavour can be appreciated in various ways. Drizzle it over warm pancakes or waffles for a decadent breakfast, pair it with sharp or creamy artisan cheeses, or use it as a natural sweetener in salad dressings. It also works wonderfully in marinades or glazes for roasted meats and vegetables, adding depth and a hint of sweetness. For a luxurious treat, swirl it into yogurt or drizzle it over ice cream and fresh fruit.

How to Store Your Honey

To preserve the natural potency and unique qualities of this honey, store it in a cool, dark place. Exposure to light and heat can degrade the beneficial enzymes that contribute to its antibacterial activity. Keeping it away from light and high temperatures will help maintain its rich flavour, texture, and active properties, ensuring it remains as nature intended.

Why Raw Honey is Different from Processed Honey

Raw honey generally means the honey has not been processed; it has come from the hive to the jar with minimal interference. Most supermarket honey is highly processed to make it look more attractive, drained of pollen, often heated, and blended. Raw honey tends to vary from batch to batch. This is because it is not processed in a factory, filtered, or heated to look homogeneous. It changes with the season and climate and what the bees feed on. We will update this fact sheet according to which batch we currently have in.

Crystallisation

Please know that raw honey does crystallise and is a natural process of raw honey (therefore we cannot accept returns on honey that may have crystallised). We indicate on the website the state of each honey - either runny or crystallised but be aware this is to the best of our knowledge, and the state can change quickly. For more details on crystallisation, check our Runny Honey Guide or visit the section on Wikipedia regarding honey crystallisation and phase transitions:
