This exceptional raw Greek honey is naturally produced from bees foraging on both Oak trees and Sidr (Ziziphus) bushes in the wild forests near Komotini, Thrace. It combines the unique strengths of two of our most bioactive honeys into one rare harvest. With a thick texture and flavour notes of molasses, dark chocolate, and toffee, this high-activity honey (TA 28.5) offers both exceptional taste and natural potency. Warm, smoky oak overlaid with a subtle herbal lift from Sidr—almost balsamic in its woodiness, with whispers of resin and a delicate honeyed sweetness underneath.

Deep oak dominates, with molasses and dark chocolate tones, rounded by the creamy smoothness of Sidr. Rich, thick, and almost confection‑like: imagine the soft centre of a toffee slice, but with earth, depth, and forest complexities.

🎨 Colour

Dark amber, dense and glossy. Naturally thick, with a spoonable texture. It may crystallise over time into a fine-grained, fudge-like consistency.

🌍 Origin

This honey comes from the wild hills and oak forests surrounding Komotini in Thrace, northern Greece. The area borders the Rhodope Mountains and is rich in biodiversity, with native oak trees and Sidr (Ziziphus) bushes growing in abundance. Protected under the Natura 2000 network, the region offers unspoiled forage and a pristine environment for the bees. The Mediterranean climate, combined with the mountain influence, supports rich nectar flow and high enzymatic activity in the honey.

🧪 What does “Active 25+” mean?

We send this honey to a lab for a "Total Activity" test, which measures antimicrobial potency against Staph aureus bacteria. An Active 25 rating is exceptionally high—comparable to top-grade Manuka honey. The activity is largely due to an enzyme that produces hydrogen peroxide. Please note: the activity level is highest at testing and naturally declines over time, especially with light and heat exposure. Store in a cool, dark place to help maintain potency.

Keep in a cool, dark place to protect the natural enzymes that give honey its antibacterial qualities. Avoid direct sunlight and high heat.
