Rare Raw Certified Organic Greek Sidr Honey – Deep Herbal Flavour, Active 24

This rare Greek Sidr honey comes from beekeeper Asterios, whose hives rest deep in the dense, biodiverse forests of Northern Greece, near the Turkish border. The landscape here is alive with Sidr trees, thriving without modern agriculture or pesticides. From this untouched sanctuary, the bees produce an exceptionally pure honey—verified as 76% Sidr pollen—that carries a deep herbal sweetness, soft vanilla notes, and remarkable intensity. With its Active 24 antimicrobial rating, this honey is both rare and highly prized.

Product Highlights

  • Rare and legendary Sidr honey
  • Certified Organic
  • Lab tested Active 24 – strongly antimicrobial
  • Verified as genuine Sidr: 76% Sidr pollen
  • High mineral content (1.57 mS/cm conductivity)
  • Richer, more intense flavour than most Sidr honeys
  • Harvested from isolated, pesticide-free Sidr forests
  • Cold-pressed & unpasteurised
  • Antibacterial & 100% raw

Aroma

Subtle herbal notes with a whisper of vanilla and wild herbs. Clean and earthy, reflecting the purity of its forest origin.

Flavour

Smooth, indulgent sweetness with complexity. It opens with full-bodied Sidr richness, unfolds into soft vanilla and caramelised tones, and finishes with wild herb and spice notes. The purity enhances the intensity, making it long-lasting and memorable.

Colour

A deep amber glow with golden highlights. Translucent and clear, thanks to minimal filtering. Over time, natural crystallisation may occur, giving it a creamy texture.

Origin

Harvested in the wild forested borderlands of Northern Greece, near Turkey. This is a protected ecosystem of ancient trees, thriving wildlife, and abundant Sidr (Ziziphus spina-christi). With no pesticide use or agriculture, the bees forage in complete purity, producing honey that embodies the natural heritage of the region.

Common Uses

  • Drizzle over artisan bread or warm toast
  • Sweeten herbal or black tea
  • Pair with strong cheeses, especially aged or blue
  • Swirl into Greek yoghurt or porridge
  • Use in marinades or dressings for richness
  • A luxurious addition to cheese boards and fruit platters

🧪 What does “Active 24” mean?

We send this honey to a lab for a "Total Activity" test, which measures antimicrobial potency against Staph aureus bacteria. An Active 24 rating is exceptionally high—comparable to high-grade Manuka honey. The activity is largely due to an enzyme that produces hydrogen peroxide. Please note: the activity level is highest at testing and naturally declines over time, especially with light and heat exposure. Store in a cool, dark place to help maintain potency.

🧊 How to store your honey

Keep in a cool, dark place to protect the natural enzymes that give honey its antibacterial qualities. Avoid direct sunlight and high heat.

🍯 Why Raw Honey is Different from Processed Honey

Raw honey is pure, straight from the hive, retaining natural enzymes, pollen, and nutrients. Supermarket honey is usually pasteurised, filtered, and blended for uniformity—removing much of what makes honey unique. Every jar of raw honey is different, shaped by climate, season, and forage, making it a living reflection of its origin.

🌀 Crystallisation

Raw honey crystallises naturally (so we cannot accept returns on crystallised honey). We indicate whether the honey is runny or crystallised, but this may change. If you prefer it runny, simply warm it gently. See our Runny Honey Guide or read more.
