Aroma

Warm and inviting with herbal, woody undertones and a whisper of mountain wildflowers — evocative of the fresh air and ancient landscape of Olympus.

Flavour

Smooth and bold: deep caramel sweetness, hints of vanilla, and a grounding herbal note. Complex and lingering, enhanced by the purity of high‑altitude origin.

Colour

Rich amber with reddish‑gold hues, slightly opaque due to its raw, unfiltered state. Crystallisation may occur naturally, altering texture or lightening colour — but not quality.

Origin

From the lower slopes of Mount Olympus, where Sidr (Ziziphus) trees flourish beside native herbs and wildflowers. The landscape’s biodiversity, protected springs, and minimal human interference give this honey exceptional purity and strength.

Common Uses

  • Soothe sore throats — stir into warm tea.
  • A daily spoonful to support immunity.
  • Drizzle over Greek yoghurt, porridge, or fresh fruit.
  • Pair with strong cheeses like feta or blue cheese.
  • Use in vinaigrettes, salad dressings, glazes, or marinades.
  • Swirl into smoothies or wellness tonics.

Producer Story

Dimitris is a dedicated beekeeper whose hives are nestled deep in the wild terrain of Mount Olympus. With a focus on sustainability and bee health, he cold‑presses his honey and avoids artificial inputs. His commitment ensures every jar reflects the untouched mountain environment.

Raw Organic Greek Mountain Honey (Active 21)

This 1 kg jar captures the wild, diverse flora of Mount Olympus — from mountain herbs to oak, fir and pine forests (including rare Bosnian pine), thanks to the mountain’s unique microclimate, elevation and biodiversity. The result is a deep, complex honey that reflects the richness of its habitat.

Key Features

  • Cold‑pressed — retains natural enzymes and nutrients.
  • Lab‑tested Active 21 — strongly antimicrobial.
  • Unpasteurised — preserves natural flavours and health benefits.
  • Coarse‑filtered — ensures purity while keeping beneficial pollen.
  • 100% Raw — maintains all natural properties.
  • Wilderness honey — sourced from untamed, protected habitats.
  • Artisan beekeeping — crafted with traditional methods for superior quality.
  • Unique monofloral/forest‑blend honey from a rare environment — a truly singular taste experience.

Flavour & Colour

A complex flavour profile: starting with earthy forest undertones, evolving into a spicy, herb‑infused finish that lingers on the palate. Slightly darker than light honeys, with deep brown hues and a richness that speaks of ancient forests and high‑altitude terrain.

Common Uses

Ideal at breakfast — on porridge, buttered toast — or straight from the spoon. Also excellent stirred into herbal teas, stirred into yoghurt, or used as a natural sweetener in cooking and baking.

🧪 What does “Active” mean?

We send some honeys to a lab for a “Total Activity test.” This test measures a honey’s antimicrobial activity using a solution on a lab plate against Staph Aureus bacteria. The honey is graded between 10 and 25+ (or higher). This test is similar to that used to grade Manuka Honey. The main antibacterial activity is caused by a bee enzyme that creates hydrogen peroxide in the honey. Please bear in mind that the Activity Level is at its highest when we test it and will decrease over time — faster if the honey is exposed to light and heat. Store the honey in a dark, cool place to slow this.

🧊 How to store your honeys

Store in a cool, dark place. Light and heat degrade the enzymes responsible for antibacterial activity. Keeping your honey away from light and high temperatures helps maintain flavour, texture, and active properties — preserving it as nature intended.

🍯 Why Raw Honey is Different from Processed Honey

Raw honey is different from processed honey because it’s never pasteurised, finely filtered, or blended — so it retains the natural pollen, enzymes, and full spectrum of flavour that processed honey loses. Processed honey is typically heat‑treated, blended, and homogenised from many different sources to appear uniform. In contrast, raw honey is single‑origin or single-region, coming straight from the hive with minimal handling. Its texture, taste, and colour vary with the season and the terroir — shaped by the local climate, soil, the temperament of the bees, the beekeeper’s care, and the flowers the bees forage on. Each batch is unique, and we update this description to reflect the current harvest.

🌀 Crystallisation

Raw honey crystallises naturally (so we cannot accept returns on crystallised honey). We indicate on the website the state of each honey — runny or crystallised — but this may change. If you prefer runny honey and it has crystallised, it’s easy to return it to runny (see our Runny Honey Guide or learn more about honey crystallisation online).
